Cherries pack a nutritional punch, they can help reduce the bodies inflammation response, reduce pain and also contain melatonin which helps you sleep better.
This recipe is for fresh cherries but you can also use frozen cherries when they’re not in season which you can buy in all good stores so you can still enjoy their nutritional benefits all year round.
French Toast with Poached Cherries
Prep to plate: 25 minutes
Poached Cherries Ingredients:
2 x medium oranges (squeezed)
125ml hot filtered water
1 tbsp maple syrup
300g fresh cherries
Poached Cherries Instructions:
Cut all the way around each cherry stone with a small sharp knife and peel off each half and place in a medium saucepan (your hands will get stained red so perhaps wear kitchen gloves if that’s an issue for you!).
Add orange juice, water and maple syrup to the pan and cook on a simmering heat for 3 minutes, remove from the heat and leave to absorb the syrup whilst you cook the toast.
French Toast Ingredients:
4 x large free-range eggs (local and organic too if possible)
80ml milk (Jersey or Organic whole milk)
1 level tbsp coconut oil
1 tsp vanilla paste
4 x medium-thick slices of whole grain sourdough bread
4 tbsp Greek yoghurt
French Toast Instructions:
Break eggs into a bowl and lightly whisk, add in vanilla paste and milk then whisk again until all well combined
Heat the coconut oil in a large frying pan until melted
Dip 4 bread slices one by one into the egg mixture, ensure they are completely covered and place each one into the frying pan
Cook bread slices on each side until they are golden brown all over
Place toast onto plates, portion out Greek yoghurt onto each plate and drizzle cherries on top of the toast to serve.
